Nitrates in Vegetables Protect You Against Gastric Ulcers

Fruits and vegetables that are rich in nitrates can protect your stomach from damage. The nitrates are converted into nitrites by the bacteria in your mouth, and then subsequently transformed into biologically active nitric oxide in the stomach.

That means that antibacterial mouthwashes can also be harmful for the stomach.

Nitrate-rich vegetables such as spinach, lettuce, radishes and beetroot activate the mucous membranes' own protective mechanisms, reducing the risk of problems such as gastric ulcers.

Call me clueless, but what's the difference between the Nitrates and Nitrites found in vegetables that this article says are good for you and the Nitrates and Nitrites found in processed meats which are known carcinogens.

Does anybody know?

Nitrates occur naturally in plants because they absorb the Nitrogen from the soil and chemical fertilizers. This accounts for some of the bitter taste you get from some veggies. Sodium nitrite is the culprit they put in processed meats like bacon, hot  dogs etc to preserve the colour and extend the shelf life (make meats look fresh), this is the deadly guy you want to keep away from because of it's extemely high association with cancer amongst diseases.......

All the more reason to eat fresh local organic veggies and meats...

Because vegetables = good and meat = bad. One thing you'll notice is that rarely do reports of the studies of nitrates and meat divulge the fact that they're studying these types of meats and their additives. It's always just "red meat".

Read\Study about NPN (non-protein nitrogen)

Remember the pet food issues last year... NPN...

Fertilizers, Pesticides, Herbicides, feeding this to livestock, and humans along with produce that is picked green  before the NPN can complex completely has all increased NPN in the food chain.

Bad stuff...

I do not buy this report at all... I would ask, what is the impact of these nitrates and nitrites on the healthy  flora of the intestines?

I have always wondered about nitrates in plants.  This article actually enforces my concerns.  Both nitrates and nitrites are potentially dangerous.

Nitrates are associated with increased risk of lymphomas.  Nitrites are supposedly converted to deadly (carcinogenic) nitrosamines in the presence of proteins during digestion.  It would be interesing to see a study comparing lymphoma rates with amounts of nitrate absorbing veggies eaten.  Also, nitrates can be toxic by binding to hemoglobin forming methemoglobin, which cannot release oxygen.  This is why it is dangerous to serve very young children high nitrate veggies or additives.  People have died from nitrate toxicity, usually from accidental overdose from cooking additives.
